We've luxuriously prepared large, locally sourced maitake mushrooms into tempura. The light, crispy batter releases the rich aroma and intense umami of the maitake mushrooms. First, try a bite with the accompanying salt. It's perfect as an accompaniment to soba noodles, but we especially recommend enjoying the fresh, fragrant aroma on its own.
